120g-150g minced beef (5% fat)

1/4 small onion diced

1/2 clove garlic

150g-200g mixed vegetables (mushrooms, green beans, cauliflower, spinach, celery, tomatoes, etc)

200ml (vegetable) stock

1 tbsp chopped parsley



  • Make small balls from the minced beef
  • Sweat the onions and garlic until transparent
  • Add the vegetables and sweat for a couple of minutes
  • Add the stock
  • Add the meatballs
  • Allow to cook for 15 minutes
  • Season to taste
  • Sprinkle with the chopped parsley before serving
