Pan Fried Cod with Prosciutto and Thai Red Curry Stir Fried Vegetables

An experiment !  Sometimes it pays to think outside the box.  Quick, very tasty and satisfying – the whole family enjoyed it !

Pan Fried Cod with Prosciutto and Stir Fried Thai Red Curry Vegetables

Prep Time: 5 Minutes
Cook Time: 10 Minutes
Total time: 15 Minutes


  • 120g Cod Fillet
  • 30g Prosciutto slices
  • 50g Leek (sliced into rings)
  • 50g Fennel (sliced)
  • 50g Courgette diced
  • 2 tsp Thai Red Curry Paste
  • 1 tbsp Olive Oil


1. Add 1tsp olive oil to a hot frying pan
2. Add the cod to the pan, skin side down and fry until skin is crisp
3. Turn the cod over and turn the heat down to medium
4. Cook the cod for a further 3 minutes and then add the pancetta for the last 2 minutes - cook until the pancetta is crisp (approx. 2 minutes)
5. In the meantime, add the rest of the olive oil to a wok and heat until hot
6. Add the fennel, courgette and leek to the wok and cook for 1 minute
7. Add 2 tspns of Thai Red Curry Paste to the vegetable medley and cook for a further 2 minutes
