Oven Baked Chicken with Spinach

Oven Baked Chicken with Spinach

  • 500g chicken breast, cubed
  • 200g spinach
  • 400g mushrooms
  • 1 onion, diced
  • 125g cream cheese
  • 70ml chicken stock
  • 125-150g grated low-fat mozzarella
  • Chilli powder
  • garlic powder
  • 1-2 cloves garlic
  • Salt and pepper to taste
  • Tip ! From Phase 2, swap the mozzarella for gorgonzola


1. Preheat the oven to 190 C
2. Cut the chicken fillets into thin strips and fry until seared fully on the outside
3. Take an oven dish and 'grease' it with 1 or 2 crushed garlic cloves
4. Put the chicken on the bottom of the baking dish
5. Slice the onion and mushrooms and fry briefly, then add the spinach
6. When the spinach has wilted, spread the vegetables evenly over the top of the chicken in the baking dish
7. Put the cream cheese in a bowl and add the chicken stock, chilli powder and garlic powder, plus sat and pepper if desired, and mix everything together well
8. Pour the mixture over the ingredients in the baking dish and cover the dish with aluminium foil
9. Bake in the oven for approximately 20 minutes
10. Take the casserole out of the oven and remove the foil
11. Sprinkle with the grated mozzarella over the chicken dish and return to the oven for 10 minutes
