Omelette Parma Ham Nests

2 large eggs

40 g Parma ham

2 tbsps Skyr 0% fat

100 g cucumber

50 g cherry tomatoes

Fresh chives

Salt and Pepper

2 tsp chopped parsley

Salt and Pepper to taste



  • Pre-heat the oven to 180 C
  • Line 2 to 3 cups in a muffin tin with strips of Parma ham
  • Whisk the eggs and add salt and pepper to taste
  • Add two small tbsps of Skyr 0% fat, fresh chives 
  • Spoon the mixture into the muffin tins
  • Place the muffin tin in the oven for 10 to 12 minutes
  • Remove the nests from the muffin tin and place them on a baking tray
  • Put them back in the oven for a while to get the bottom nice and crispy (about 3 minutes)
  • Serve with a tomato and cucumber salad
