Omelette Parma Ham Nests

Ingredients:
2 large eggs
40 g Parma ham
2 tbsps Skyr 0% fat
100 g cucumber
50 g cherry tomatoes
Fresh chives
Salt and Pepper
2 tsp chopped parsley
Salt and Pepper to taste
Method:
- Pre-heat the oven to 180 C
- Line 2 to 3 cups in a muffin tin with strips of Parma ham
- Whisk the eggs and add salt and pepper to taste
- Add two small tbsps of Skyr 0% fat, fresh chives
- Spoon the mixture into the muffin tins
- Place the muffin tin in the oven for 10 to 12 minutes
- Remove the nests from the muffin tin and place them on a baking tray
- Put them back in the oven for a while to get the bottom nice and crispy (about 3 minutes)
- Serve with a tomato and cucumber salad
