Asparagus soup with ham strips

A lovely lunch  with PowerSlim toast or for a light supper !

Asparagus Soup with ham strips

Cook Time: 15 Minutes
Total time: 25 Minutes
Servings: 1 person

Ingredients

  • 120-150 g of cooked ham, cut into strips
  • 150 g white asparagus, peeled
  • 50 g of green asparagus
  • ¼ cube of vegetable stock
  • 50 ml of semi-skimmed milk
  • Handful of fresh parsley, finely chopped

Instructions

1. Cook the asparagus in a large pan with boiling water and some salt for about 10 minutes
2. Drain the asparagus and collect the cooking water in a measuring jug. Make up to 250 ml with water if necessary and bring to the boil again
3. Cut the asparagus into pieces and add to the boiling water together with ¼ stock cube
4. Let it boil for a few minutes and then puree in a blender or with a hand blender
5. Bring to the boil again and add the milk and the ham strips
6. Stir in half of the parsley and garnish the bowl with the rest
